NEW!! Cooking Classes with Chef Scotty - $35 per class

The Journey with Chef Scotty

Sensation, crisp, balance, aroma, spice, creamy, sizzle, flaky . . .the journey of cooking is one of great personal passion and a certain bond that brings our many worlds, customs and traditions beneath one roof. Owner of San Diego’s acclaimed ChileCo Catering, Chef Scotty Wagner now brings his endeared flavors, charismatic personality and suave cooking style right to you!

- Cooking classes will take place at the Macy’s Cooking School at the Home Store in Mission Valley.
- Scheduled classes are on Tuesdays from 6-8pm.

- Our cooking classes are demonstration style classes.

- The Cooking Center has a state-of-the-art kitchen with large screen television monitors for easy viewing and comfortable seating for 80 students.
- Printed recipes are provided, there is a tasting of all the dishes and the students can communicate with the chef during the class. Complimentary non-alcoholic beverages and light refreshments are served before and during class.
- Just sit back and relax while Chef Scotty Wagner prepares dishes while describing methods, tips, and tricks to make them a success!

ChileCo can create special classes for private groups. Cooking classes are a great way to celebrate holidays, birthdays and anniversaries, and are ideal for club meetings and team development. Email us for more information.


July 6th 6-8pm
Yum Cha Yum: Chinese Dim Sum & the Sacred Art of Tea $35

Many cultures love wrapped-up foods - from tortillas to sandwiches. Traditional Asian wraps are different, fun to learn and totally delicious. In this class we will learn a real Rangoon, Chinese shu mai, an open-faced dumpling, potstickers, a type of pan-fried Chinese ravioli, the delectable moonbun and all this deliciousness paired up with several exotic teas of the Orient.

July 20th 6-8pm
Greek Gods to Pharaohs: Lebanese & Greek – Mediterranean Cuisine $35

So you think this is about that gyro? Oh, hell no! Chef Scotty is going to abruptly alter your world in
teaching the real culinary traditions of these ancient cultures with an epicurean odyssey. From hummus to
tabbouli to taziki, baking fresh flatbreads, pinenuts & artisan olives, mastering your fear of phyllo, managing lentils, sumac, citrus jeopardy, learning to love lamb and playing by pistachio.

July 27th 6-8pm

Caribbean Dreamin: Jamaican jerk, Cuban definition, Island inspiration $35

What could be more leisurely seductive then the tropical cuisines cultured from the journeys of Old World settlers. African, Asian, Portuguese, English, French, Italian & Spanish influences on these island countries produced some amazing food. We will cover chutneys, preserving by pickling, some killer spice mixes, the abalone and nurture all this learning with a sip or two of Rum.

August 10th 6-8pm
Aztec meets Maya: Aztec influence & dishes of Chocolate & Chilies $35

Inexpensive, amazingly versatile, and so indefinitely flavorful the cuisine of Mexico is everywhere in San Diego. But who’s doin’ it right? It’s more than salsa and tortilla chips for sure! You will learn the nature of nopale, chilies 101, the sauce of Oaxacan Mole, “Like Water for Chocolate”, the best stick I’ve ever licked, a conquest of corn and agave libations to nip that piñata in the butt!

August 17th 6-8pm
Provencal to Paris: Air out your French Laundry – Culinary Revitalization $35

Julia Child was preceded only by Escoffier & Careme in bringing the developed structure and categorization of French cooking. Chef Scotty will cover some of the most basic foundations of cooking including how to make a beurre blanc, truffles, from bones to culinary gold, the sachet & bouquet, duck/duck/confit and certainly a touch of patisserie with a sexy crème brulee!

“The Social”

The ChileCo Social is a magical & unique dining experience. It is a gathering of a limited number of guests, for the enjoyment of each others company while being treated to a five course wine and dinner pairing in celebration of artisanal goods, local farmers, ranchers and fisherman.

Seating is limited at each Social. Reservations taken on a first come, first serve basis. Socials start aprrox. one hour before sunset on that day. Reserve online & see menus for each Social.

Here’s a snippet: JOHNSON: They’re amazing. It’s ChileCo Catering Company and these socials are basically dinners, elaborate, elaborate dinners with deejays and lights and music and cocktails in places where you would not expect to have a dinner: on a rooftop, in a fish warehouse, on Torrey Pines State Beach the next one is. You’re going to have a table full of – 90 people long on Torrey Pines State Beach. Last year, they had to actually build a berm to stop the high tide that was coming in on dinner. And it’s candles and everything. It’s really an amazing concept.
